Potato Leek Soup
Time for Some Comfort Food!

Potato Leek Soup
Servings: 4
8 cups of chicken or vegetable broth
6 potatoes, peeled and cut into large pieces
4 leeks (white/light green parts only), thoroughly washed and sliced
3 stalks celery, roughly chopped
1 bay leaf
1/2 t dried thyme
salt and pepper to taste
1 cup of heavy cream  
Cheddar cheese and/or bacon bits to top it off
What You’ll Need
1 large cooking pot
Food processor or immersion blender
Soup bowls and spoons for serving

PREPARATION 
  1. Place your stock, potatoes, leeks, celery, bay leaf and thyme in a large pot and sprinkle generously with salt and pepper. 
  2. Bring it all to a boil and cook for 15-20 minutes, (until potatoes are soft).
  3. Your bay leaf’s work is done here – let’s remove it.
  4. Next, blend the mixture until it’s silky smooth in your pot with an immersion blender or in batches in your food processor or blender.
  5. Pour on your cream and simmer your soup until it’s thickened for about 10-15 minutes.
  6. Serve and top it off with your choice of shredded cheddar and or bacon bits.
Your hot and delicious bowl of potato goodness is guaranteed to be smile-worthy!

Creamy Clementine Smoothie

INGREDIENTS
Servings: 1
Creamy Clementine Smoothie
1 cup, milk
4 clementines, peeled
2 small (or 1 large) bananas
½ cup vanilla Greek yogurt
1 teaspoon vanilla extract
1 handful of ice
What You’ll Need
Blender/Food Processor
1 spoon for doling ingredients in
1 glass cup
PREPARATION 
  1. Peel your clementines and bananas.
  2. Add the following into your blender:
    • Peeled clementines and banana(s)
    • ½ cup of vanilla Greek yogurt
    • 1 teaspoon of vanilla extract
    • 1 cup of milk
    • A handful of ice
  3. Blend until smooth!
Easy, right? Now pour your smoothie into a glass and enjoy your refreshment that’s as sweet as it is healthy – that’s something to smile about!
