Braces Friendly Eats: Chocolate Coffee Ice Cream Soda (aka "The Minne-Soda")

Chocolate Coffee Ice Cream Soda 
(aka "The Minne-Soda")

INGREDIENTS:
Servings: 1 tall glass

Chocolate Minne-Soda
Haagen-Daazs coffee ice cream (accept no substitutes!!!)
¼ cup of milk
2 tablespoons, chocolate syrup
Cream Soda

What You’ll Need
1 glass
1 spoon to stir
1 appetite for something sweet 😊

PREPARATION
1.     Pour milk into a nice tall glass, about 1-2 inches high.
2.     Add chocolate syrup – a lot of it! Turn that milk to a deep and delicious shade
3.     Add several scoops of ice cream till you’ve filled your glass. (Ice cream addicts may add more)
4.     Fill your glass with cream soda and stir lightly.
5.     Let it settle and top it off with more cream soda.
6.     Enjoy with a long spoon and a straw.

Now sit back, relax, and enjoy your glass of heaven right here on earth. We promise it will be smile-worthy!

Braces Friendly Scrambled Egg Muffins

Scrambled Egg Muffins

INGREDIENTS
Servings: 12 muffins 
Scrambled Egg Muffins
1 dozen large eggs
½ cup milk
Salt/pepper
¾ cup grated cheese of your choosing 
What You’ll Need
Large bowl
12 Cup Muffin Cooking Tin
Cooking spray
¾ cup grated cheese of your choosing 
PREPARATION 
  1. Grab your large bowl and whisk up your eggs and milk with a quick dash of salt and pepper.
  2. Add a fresh coat of cooking spray on your muffin tin spray evenly— so all your cups are covered.
  3. Pour evenly into the cups of your muffin tray.
  4. Sprinkle 1 tablespoon of your favorite cheese on each muffin. (Torn? We recommend Colby Jack.)
  5. Pop in the oven and bake at 350 for 20-minutes or until cooked through.
  6. Let cool for a few minutes before removing from tin and spice it up or add some flavor with hot sauce or ketchup. 
  7. Enjoy!
Saving some for later? Your batch can keep for a couple days, perfect for a quick, hot breakfast on-the-go. Just reheat for a minute in your microwave.

Braces Friendly Banana Oat Chia Pancakes

Banana Oat Chia Pancakes
Bananas and oats, see how they stack up!

Servings: 2-4

Banana Oat Chia Pancakes
1 cup rolled oats
2 large eggs
1 ripe banana
1 tablespoon chia seeds
1 teaspoon vanilla extract
1 tablespoon coconut oil (plus extra for cooking)
1/4 cup milk (almond, soy, or dairy
1 teaspoon baking powder
1/2 teaspoon salt

PREPARATION (with Food Processor)
  1. Use your food processor to grind the oats into fine flour. 
  2. Add the remaining ingredients and pulse until well-blended. 
  3. Heat up a large nonstick skillet over medium heat.
  4. Once warm, add coconut oil and swirl around until melted with your pan bottom fully coated!
  5. Drop your batter into 1/8 cup portions.
  6. Cook ‘em up for 3-4 minutes or until slightly set/bubbly. 
  7. Flip and finish cooking for about 2-3 more minutes.  
  8. Transfer to your plate and top it off with sliced banana and your choice of honey, syrup, or even Nutella.
  9. Enjoy!
No processor? No problem.
  1. Crack open those eggs and whisk them up in a medium sized bowl.
  2. Mash your freshly peeled banana in with the egg.
  3. Add cinnamon, vanilla, chia seeds and oats and stir to combine well.
  4. Set aside and take five while you prepare your toppings.
  5. Heat a large nonstick skillet over medium heat.
  6. Once warm, add the coconut oil and swirl around till melted and the bottom of the pan is completely coated.
  7. Using a ¼ cup measure, scoop mix into your cooking pan, leaving space between pancakes so you can turn them easily. Cooking just 3 at a time!
  8. Cook for 3-4 minutes, then flip those babies over and cook for another 2-3 minutes on the other side or until cooked through
  9. Transfer to your plate and top it off with sliced banana and your choice of honey or syrup, or maybe some Nutella?
  10. Enjoy!

Jenna's Famous "Braces Friendly" Molten Lava Cake Recipe

This "braces friendly" dessert is the ultimate go-to for all chocolate lovers, especially the ones who love rich dark chocolate, like me!  You can ask all my co-workers, family, and friends - these molten cakes are simply the best!  I first started making these with my mom about seven years ago.  At that time, both her and I were fans of the TV show The Biggest Loser.  We made it a weekly tradition to make molten cakes every Tuesday when the show was on.  We often commented to each other on how we were watching contestants working hard to lose weight, and there we were indulging in a weekly dessert together!  To this day, my mom always has all the ingredients on hand, so she is always ready when visit and ask, “How about a molten cake, Mom?” Her answer is always "yes" of course!

I have had many trial and error molten cake baking sessions with sometimes overcooking, sometimes undercooking, and sometimes the cakes getting stuck in the dishes. The recipe below is what I have found to make the perfect molten cakes...

Without further adieu, I give to you my famous "braces friendly" molten lava cake recipe:

Molten Lava Cakes Recipe
*Makes 2* 
  • 2 oz. Baker’s Bittersweet Baking Chocolate
  • 4 T. Margarine
  • 3 T. Four
  • ½ C Powered Sugar
  • 1 whole egg
  • 1 egg yolk
  • Spray PAM
  • 2- 1 cup ramekins, or similar round dessert dish
Preheat oven to 425 degrees. 
In a medium microwave safe bowl, melt chocolate and margarine for 30 seconds, stir, then repeat as needed until completely melted.  Whisk in flour and powdered sugar, then egg and egg yolk. Spray bottoms of ramekins with PAM, divide batter in half, and pour into prepared ramekins. Place in center rack of oven and set the timer for 12 minutes.  Check the cakes after 6 minutes. When the centers are slightly jiggly, and the cakes are firm about ½ inch from the outer edges, remove the cakes from the oven and let sit for one minute. Carefully cut around the edges of the molten cakes and invert onto serving plate. (Note: The cakes may crack so the lava comes running out, don’t worry, this is normal!)  You can dust powdered sugar on the top of the cakes for garnish. Serve with lots and lots of ice cream.  Different ovens may cook the molten cakes quicker. If you prefer more lava in the middle, cook for a shorter time. If you prefer less gooey goodness in the middle, cook for a little longer so the center is slightly firmer. You do not want to over bake.

1.  Help your teen meet new friends with a smile.
